I love collard greens, but they are really easy to screw up. They aren't supposed to be bitter or slimy. Okra is another veggie that I adore that gets messed up easy...it's not supposed to be slimy!

I live in Seattle, but my mother's side of the family is all from the South. I don't get a lot of soul food, but we have a restaurant up here that serves the best collard greens. *drools to self*
