I'm originally from south Louisiana, and there are some occasions where one might use vats...like if you're doing a crawfish boil, and you put all the crawfish, potatoes and corn in one big old vat. And, it's quite yummy. And, it's usually the kind of thing you'd have 50 of your closest friends and family over for and you'd all eat on these big park bench like tables and it's more of a celebration type thing. So, it's a whole different animal than other southern cooking which...for the most part uses pots and pans and not vats. lol
